We produce a hybrid of the two favourite Australian abalone the Blacklip and Greenlip abalone for a product that has the best of both species. We’re committed to producing some of the highest-quality abalone in Australia in a sustainable way that ensures seafood can be enjoyed for future generations to come.
Australian blacklip abalone gets its name from the distinctive black lip along the edge of its shell. This species is commonly found living in coastal waters and along rocky, intertidal shores. It has a delicious, buttery flavour, making it well sought-after and a favourite Australian seafood.
We use this variety to create our Green Tiger hybrid, providing you with a unique dining experience you won’t get anywhere else.
Australian greenlip abalone is slightly more tender than its blacklip counterpart, and is recognised by its bright green lip along the edge of the shell. It’s renowned for its sweet, but salty taste – and we use it to create our Green Tiger abalone.
There are a number of ways that we package our Australian abalone. You can have it fresh, canned, dried, or vacuum-packed. Each method has different benefits:
Fresh: Our live abalone is freshly packed, straight from the farm.
Canned: Canned abalone is available in brine for a tasty finish.
Dried: Dried abalone is typically soaked in water for few days, then braised.
Vacuum-packed: Our vacuum-packed varieties are retort-cooked from live abalone to ensure the highest quality.
Eating abalone has a number of health benefits, which makes it good for you. For starters, it’s a great source of protein, iron, magnesium and Vitamin E.
It’s also rich in selenium, which is essential for improving our immune system – while also providing us with iodine, which is beneficial for a healthy thyroid. Better yet, it’s also low in calories, while also providing you with a small dose of Omega 3.
Occasionally you may notice a slight blue tinge to your vacuum-packed abalone. This is perfectly natural and due to the fun fact that abalone have blood that turns blue when it is oxygenated, due to the copper-containing protein hemocyanin. Abalone blood is colourless when oxygen is removed. We don’t add antioxidants to our vacuum-packed abalone.
